I have recently become obsessed with two different websites, Skinny Taste and Cookie and Kate. Gina Homolka of Skinny Taste has recently been using Instant Pot for a number of her pressure cooker, fast recipes (in Skinny Taste Fast and Slow Cookbook), which I’ve been dying to try.
So, I am going to order an Instant Pot Ultra, the latest and greatest and see how it does. This Instant Pot has been tried and tested by a lot of people and there are so many Instant Pot recipes on YouTube and online. It’s not as fancy as the new Instant Pot Ultra but makes yogurt, cake, pressure cooks, and sterilizes just like the Ultra. The reason I decided to order the Instant Pot Ultra is due to the altitude adjustment settings, living in Denver at 5,160 feet, it can be difficult to make assumptions on adjustments for altitude when baking and cooking. Meanwhile, I would love to share some of my favorite recipes from Skinny Taste and Cookie and Kate. Skinny Taste focuses on some amazingly delicious recipes that have some lighter options without sacrificing the taste. I love her Zucchini Lasagna and Slow Cooker Banh Mi Bowls, both of which have become a staple in our home. I’ve been wanting to make this Picadillo which uses the Instant Pot and now perhaps I can!
Cookie and Kate is somewhat new to me but if you have a picky husband or child who doesn’t eat too much meat, you’ll love her vegetarian dishes. I tasted a friend’s recipe for Breakfast Enchiladas and loved them.
